Recipe: Classic Bruschetta


Bruschetta makes the perfect quick appetizer or lunch. There are so many different variations to the recipe, but when I'm in a hurry I like to keep it simple and easy. There really is no need for measurements...it's pretty goof-proof. Enjoy!

Ingredients:

1/2 to 1 tomato per serving (if heirloom tomatoes are in season, they are the best!)
About 1 clove of garlic per tomato, minced
good extra virgin olive oil, to drizzle
fresh basil, chiffonade (as much as you want)
salt & pepper, to season
baguette, sliced (i like using whole grain)

Toast or grill the bread.

Dice the tomatoes with seeds and all. Place the diced tomatoes in a bowl. To the tomatoes, add the garlic and fresh basil. Then, drizzle some olive oil and season with salt and pepper. Toss all the ingredients.

Now, top the toasted bread with the tomato mixture. Drizzle the bread and tomatoes with a bit more olive oil. And...voila....bruschetta!
